Cocambo was the innovative idea of Piero Zerbin, master Pastry Chef in Aquileia. It is inspired by the traditional craftsmanship of the pastries of our area: care in the selection of raw materials, excellence in the choice of the origins of our coffee and cocoa, scrupulous preparation in the best processing techniques to enhance the taste and quality of our handcrafted products. But Cocambo is much more: the idea is to inspire our way of conceiving coffee and chocolate, to transmit the knowledge accumulated over millennia of coffee and cocoa history. It is to open our minds to the immagination of pastry art, and teach us the techniques to achieve excellence. Cocambo also wants to show us the game: try the joy of discovering master confectioners, through practical courses. Offer children a unique experience: learn to work in the lab through real experiments.
Cocambo can also be a new way of having the experience of food: through the knowledge of the raw material, the learning of the implimentation, the experimentation of the tasting techniques, the ability to evaluate true excellence. All this led Piero Zerbin to dedicating a complete work to the Cocambo World.
